Chocolate Raspberry Pancakes

I just came across your community. I'm a huge fan of raspberries. I just made this recipe on Wednesday and it was really good. I don't know if anyone has posted anything like this, but I just thought I'd share.

My pancakes are hardly gourmet. I just use regular pancake batter. I shaved down some dark chocolate and sprinkled the shavings over my pancakes just as they were almost cooked. Don't add them too early because they'll burn quickly.

I used frozen raspberries for the puree. I melted them down in the microwave with about a teaspoon of sugar to sweeten them. Mix them well and they'll break about into a liquid form after they've been heated. I layered pancake, layer of puree, pancake, layer of puree, and a few chocolate shavings on top. You won't even need butter or syrup.

It took 15 minutes to make and was really good. Great if you want a quick raspberry fix for breakfast or lunch or dinner...
